Bedtime Baking

It's almost bedtime, but we can't end today without a
little bit of kitchen magic. Our weekly veggie box brought us garnet yams, pink lady apples and anjou pears (all organic and Washington-grown); we have combined them into our first ever collaborative baking experiment!! While this is loosely based on an outstanding sweet potato and zucchini bread recipe from Epicurious, I think I like ours even better.

Sweet Potato-Apple-Pear Bread

1 cup all-purpose flour
1 cup whole-wheat flour
2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1 to 1 1/2 cups sugar (depending on your taste preference and the sweetness of your fruit)
3/4 cup oil
3 large eggs
1/2 tsp. vanilla
1 1/2 cups peeled, grated sweet potato (about 2 small or 1 medium)
3/4 cup peeled, grated apple (about 1 medium)
3/4 cup peeled, grated pear (about 1 medium)


Preheat the oven to 325 degrees. Grease a pan of your choice (we used 24 mini-muffins and a loaf pan for this amount of batter). In a medium bowl, blend the first 6 ingredients. In a large bowl, beat together sugar, oil, and eggs and vanilla until smooth. Add the grated sweet potato, apple a
nd pear to wet ingredients and stir to combine. Add the dry ingredients to the wet in parts, mixing until just combined .... do not overmix!!

Baking time will vary depending on the pan you choose. Bread will be done when an inserted toothpick comes out clean. Enjoy at any temperature! This bread freezes very well.
